“It’s not just another dish, it’s not just another taco,” Olvera said. Olvera makes a quesadilla filled with an Indian cheese called paneer and poblano pepper.Īt this taco shop, the most fulfilling thing isn’t filling bellies, it’s working with family. “You know, now Bon Appétit, like Bon Appétit, why? That’s so beautiful.”Īnd if you’re a vegetarian, Trompo’s got you covered. “I had no idea that it could do anything more than feed drunk people,” Olvera said. Olvera opened the restaurant on Singleton Avenue in April after operating out of his backyard and the Kessler Theater for a while. “One of my uncles, my business partner’s dad, had a really good recipe that was from one of the original families in Monterrey that was doing this 15 to 20 years ago,” Olvera said.Ĭredit Gus Contreras / KERA News "Trompo taco" at Trompo. They took the classic citrus al pastor recipe and substituted paprika as the marinade. Olvera’s family is from Monterrey, Mexico. The gringa, campechana, trompo, it’s all around.” These tacos are something that we grew up eating. “We do Monterrey style street tacos,” co-owner Luis Olvera says. It resembles a Mexican spin-top, called a trompo. So how did Trompo get its name? After a rotating spit of meat in the restaurant. Thanks to the magazine mention, business has skyrocketed. The Trompo taco shop, next to a tire shop in the La Bajada neighborhood, has quickly become a Dallas foodie sensation. Los Guachos tacos were voted ‘Best in the Midwest’ by Rachel Ray Magazine and the Serious Eats team.Bon Appétit announced its list of 50 nominees for America’s Best New Restaurants - and one of them is a family-owned taqueria in West Dallas. Juan, the pastorero, made it look easy but he’s the only one on the team who can do it. Finally a pineapple is placed on top and the trompo is ready to feed Los Guachos’ hoardes of hungry customers. There is a lot of skill (and knife sharpening!) involved in securely stacking and shaping the trompo. The trompo must be shaped smoothly so that it cooks evenly, and any resulting trimmings are saved for cooking on the grill. Once in position at the gas-fired roasting station, searing and trimming is done. Hard as it may be to believe, this is a relatively small one – the largest they’ve made has tipped the scales at 370lbs. At this point, any pieces that are trimmed off are sandwiched between the layers.Īll told, this trompo took about an hour to build and required two men to carry and lift it into position at the grill. Every so often he takes a pause from layering to trim and shape the trompo. The ‘ pastorero‘ (yes, there’s a Spanish title for the person assembling the spit) chooses his pieces carefully, skewering the smaller cuts of meat on the spit first and then adding larger pieces as he works his way upward. First, though, a section of pineapple is slid on to keep the pork from sliding off the bottom of the stake. The chopping board has a specially cut hole in it to hold the spit steady and vertical as the meat is piled on. Prior to building the spit, the pork shoulder cuts (in this instance, about 100lbs in total) have been marinated for a couple of hours in a mix of achiote (annatto) and cider vinegar. Here are some behind the scenes photos (with explanation) illustrating how pork, pineapple, and marinade are turned into the glorious mound of meat that is the trompo. Since we had wanted to watch the process first hand, we went to Los Guachos to observe as they went about the daily task of assembling it from scratch. It’s not overly complicated, but it can be a bit difficult to verbally explain in a way that is easily understood. Unsurprisingly, we get a lot of questions about how the trompo is made. ‘ Trompo’ is the name for the vertical rotating spit of al pastor meat from which Los Guachos shaves glistening ribbons of pork off into their tacos. One of our favorite moments, out of all of our tours, is seeing people’s faces when they first spot the trompo at Los Guachos. It’s not hard to see why it catches the eye, or how it would pique people’s interest.

Lead your troops onto the battlefield and give them the one command they want to hear: “Charge!” This deck gives your opponent no good blocking options: Either your creatures will get through, or your opponent’s blockers will be overmatched in combat.Īs soon as the game begins, your plan is to play creatures and start attacking! Many of the creatures in the “ Hope’s Crusaders” deck have flanking. Nothing-not even an apocalypse-can keep a noble fighter down, and the “ Hope’s Crusaders” deck is proof of that. The timeshifted cards in this deck are Claws of Gix, Pendelhaven, and Thallid. The 2 rares in this deck are Thelon of Havenwood and Verdant Embrace. But the best (and most fun) option may be the Ravnica card Doubling Season, which doubles both the number of spore counters you get and the number of Saproling tokens you put into play! VII or Thelonite Hermit to generate more Saprolings. Try the Time Spiral cards Sarpadian Empires, Vol. More copies of Thelon of Havenwood or Sporesower Thallid will increase the deck’s power. And a creature enchanted with Fallen Ideal can devour all your Saprolings-and your other creatures-to become big enough for one gigantic, game-winning attack.Īfter playing with the deck, customize it. Sacrifice three creatures to pay Dread Return’s flashback cost. Gain life with Claws of Gix by sacrificing any permanent. Regenerate a Thallid with Savage Thallid. Make a creature bigger with Thallid Germinator or smaller with Deathspore Thallid. Your opponent will have a harder time removing spore counters than destroying 1/1 creatures, and if Thelon shows up, you’ll be glad those spore counters are still there! The Fun with Fungus deck is packed with effects that take advantage of a sacrificed Saproling. In this case, don’t create them until you need them. If you can’t attack, use your Saprolings as blockers and sacrifice fodder. If that’s your plan, it’s best to create Saprolings as early as possible. Attacking is good if your opponent has few blockers, and it’s especially good if you have Pendelhaven Elder to pump them all up at once. To get the most from your Saprolings, you can attack with them or you can sacrifice them. You’ll be rewarded if they’re still around when Sporesower Thallid or Verdant Embrace turbo-charges your Saproling production, or when Thelon of Havenwood makes your Thallids enormous. The longer your Thallids stay in play, the more work they’ll do for you. Trade with an opponent’s creature only if you really need to get it off the table. Waiting three turns for enough spore counters to make a single Saproling might seem slow, but when you have three or four Thallids budding at once, you’ll soon have more creatures than you know what to do with.ĭon’t be too aggressive in combat with your early Thallids. In the early going, play as many Thallids as possible so they can start building up spore counters. The Fun with Fungus deck lets you take the reins of a post-apocalyptic rampage of Thallids, and these freaky fungus fiends won’t take “Eeeeewww!” for an answer. Fungus doesn’t think or sleep-it just spreads and devours. Even Rhea herself can help bring about reform on the Silver Snow route, as Edelgard's knowledge of Rhea's intentions and influence on Fódlan proves to be incomplete. At the end of her route, she ultimately does lead Fódlan into a Golden Age, but at the end of the routes that aren't hers, each new leader is also able to reform and usher Fódlan into a Golden Age via their own principles. What she's wrong about is that she is not the only one who can bring such changes. Additionally, her war is at least part of the reason why the eventual winner (whoever they end up being) is able to acquire enough power to make meaningful reforms to the status quo. were stagnating the entire continent and that change needed to happen. Ultimately, Edelgard is correct that Rhea's grip on Fódlan, plus the focus on nobility and the various Crest systems, etc. Usual suggested response will almost universally be to just delete the bolded section. I will generally be bolding the offending line. Notably, examples of this tend to be inserted into the middle of completely unrelated matters. Edelgard only very briefly alludes to her understanding of Rhea’s past with Nemesis, and her reason to fight is not because of the past but because of the suffering of Fodlan in the modern day. “ Edelgard doesn’t know the true history of Fodlan”: A recurring element of anti-Edelgard discourse is the assumption that she started a war against the Church of Seiros out of an incorrect understanding of Rhea’s history with Nemesis.I will generally be bolding the sections where it feels like the definition has devolved into an argument. Usual suggested response is to just clean it up and keep the important bits. “ Argument in the description”: When a description reads like an Edelgard fan and detractor (or visa-versa) have been taking turns arguing about whether or not the trope befits her.If enough people are interested in this, let's clean up the page! I've left commenting on so anyone with thoughts can share them. If no horizontal line is dividing two examples, it means they're sub-examples of a larger trope. They're organized alphabetically, with horizontal lines dividing individual tropes. I've compiled a list of the biggest issues here: ( ) but likely more exist. Now that the Fire Emblem series is moving on from the games she appears in, I thought it would be a good opportunity to go and clean up her page. The tl dr here is people who both like and dislike her are essentially using her character sheet as a vehicle to argue about her, so you get multiple trope examples that read like forum arguments, tropes being applied to her that don't fit at all, and occasional out of nowhere gripes about her in the middle of describing the tropes that do fit her. Perhaps unsurprisingly for a character as divisive as she is, the character page for Edelgard from Fire Emblem: Three Houses has become a mess over the three years since the game came out. I must admit, I do feel a bit more comfortable with the paint now. The photo is by Nicola Soricelli Boerer on Artists Free Reference Photos. As did the use of white gouache to create convincing water in this wide river ! The Brook in the Woodįinally, in this piece, I treated myself to a slightly larger sheet of paper 6.5 by 6.5 inch ( in a mixed media journal). Realistically, I can see how my practice on the tones of faraway hills did help here. And that’s not really my style but, again, I did call this a series of experiments. To be honest, working in this way tends to make me paint more tightly and carefully. Firstly, the small size (6 by 4 inch ) and secondly how to capture the quality of light on the water. And again, I foolishly set myself two challenges on this. In fact, it’s one more super scene from a trip to New Zealand. A Second Attempt – Landscapes in Gouache Down the RiverĪs you can see, this was the second of my landscapes in gouache on a smaller scale. But, it was a good exercise and I think I did learn a bit about seeing the values of colours in the landscape Just to make it clear, this means identifying where the shadows and colours are light, darker and darkest. Actually, I also tried to concentrate on tonality, and I struggled with the different tones in the cliffs and hills. ( I’ve had some issues with the tape I used, anyone got a good recommendation? ) Anyway, this photo was given to me by a friend and it’s a sunrise scene from New Zealand. So, here’s my first try – just ignore the botched border. And I was very impressed by the amount of beautiful detail in these little paintings. You see, I watched a lot of great videos online about this medium. This is my first attempt at a very small painting in my experiments on landscapes in gouache, 6 by 4 inch.
